Let me start off by saying that I got this recipe from my wonderful friend Kat, who told me that this recipe either came from Pinterest or a friend...but I'm not 100% sure. But, since this meal has become a staple in our menu planning in the last year, I thought it would only be fair to share this simple dish with you!
This is the easiest and tastiest meal I have probably ever made, and those are my favorite kinds of meals. No muss, no fuss, just yummy food and great conversation! If you remember, we even served these at my bridal shower in March!
- Chicken Breast (I usually make about 2 lbs of chicken for 4 people)
- 1 Standard jar of Salsa - I usually get the double jar and use half of it.
- 1 can of Medium Red Enchilada Sauce
- Any other taco toppings that you like (ie. Tomato, Avocado, Lettuce, etc)
Grab your crock pot and put the whole can of enchilada sauce and the jar of salsa in there. Clean your chicken breast and place those in the crock pot whole. If you start this meal in the morning before you leave for work, I recommend setting it on low all day long. If you start it around lunch time, set it on high for the afternoon, and it will be ready for dinner. That was the prep, my friends! How easy was that?!
When you are ready for dinner, your chicken will look like this - aka a whole lotta nothin.
Just shred your chicken into small pieces using a fork and knife. It will most likely just fall apart at this point, making it super easy. You will end up with a crock pot full of yummy chicken ready for tacos.
Matt and I are super boring about our chicken tacos, so we literally just throw some chicken and cheddar on these guys and go, but we have friends and family that put anything and everything on them.
We are minimalists, me and my hubby.
Roll it up, add some salad (and craisins for me) and you've got an amazing meal!
Speaking of salad, check out our beautiful mango wood salad bowl and
hands that we got as a wedding present. Oooh...Ahhhh.
Another great thing about this meal is that it is great as leftovers! It's not only wonderful in taco form the next day, but Matthew often times grabs tortilla chips and eats it as a great chicken dip. Yummmm.

P.S. On a complete side note...have you ever tried this Simply Orange with Mango Juice? It. Is. Delicious. I actually bought it accidentally, but it is so good and I am looking forward to making mimosas with it. :)
